Interesting ways to enrich your meal with Vitamin A

SOYABEAN KHEER

Ingredients:

Soyabean Nuggets – 10gm

Milk – 250ml

Carrot – 35gms

Sugar – 10gm

Dates (fresh) – 5gm

Method:

Soak soya granules in hot water for 15 minutes. Squeeze dry and add to boiling milk. Add grated carrot and cook till granules and carrot become soft. Add sugar and simmer for 5 minutes. Garnish with chopped dates and serve hot or cold.

VEGETABLE CHILLA 

Ingredients:

Wheat flour – 30 gm                                                    Besan (gram flour) – 20gm

Spinach – 10 gm                                                            Onion – 10gm

Carrot – 10 gm                                                               Coriander leaves – a few

Salt, green chillies – to taste                                       Oil – 5 ml

Method:

Mix together wheat flour, besan (gram flour), chopped vegetables and salt. Prepare a batter of pouring consistency by adding water. Pour the batter on a hot greased griddle and spread evenly. Turn, pou a few drops of oil and cook till golden brown on both sides.
